  1. *if u add sugar to milk and then set the curds, the dahi does not set properly but it cracks & is sort of watery !!!!

    The trick is to use condensed milk along with yr regular milk and then set the dahi : either in a earthen pot or normal steel utensil !!!!

    Enjoy the mishti doi of bengal at home !!!


  2. Misti Doi (Sweetened Yogurt)

    Ingredients

    16 oz Yogurt (Plain)

    14 oz Sweetened Condensed Milk

    12 oz Evaporated Milk

    Method:

    Mix the condensed milk and yogurt well. Heat the evaporated milk (only a little) remove from the stove, let it cool properly and then mix it with the condensed milk and yogurt mixture. Mix well.

    Pre heat oven for 5 mins Bake the mixture at 225 for 45 mins upto 1 hour. Basically keep an eye on it till the top kind of thickens and becomes red in colour. The time may vary.

    Imp - Cool the evaporated milk properly or else the yogurt curdles in heat.
