Turkey and Dove are definitely on the top of the list, but if you are looking for a real challenge all around, I would have to say sheep hunting is the most difficult of all.  People say that its a once in a lifetime thing because after they've gone once they say they would never go again.

Elk for sure.  Tons of meat.  Hard work to stalk, kill and drag one out. It seems more like hunting then any other animal.  Deer seem easy to hunt after hunting elk.  Elk meat is my favorite to eat and cook.  I make tons of jerky and still have a freezer full of the best meat.  Their hides are beautiful also.

For me in Illinois it is Whitetail deer. We've taken about 114 deer from our 40 acres in the last 20 years. We go both seasons and anywhere from 3-8 guys share the cabin. Great time and we fill the freezer, Even our wives like it. ( mostly cause were gone for awhile but they pretend to be happy when we get home. We pretend to be happy also)

We also hunt squirrels there and I used to go for pheasant and rabbit and dove but those days seems to be gone along with the places to hunt. Pretty much just deer now.

Whitetail Is amazing. I like just being out there really,its not about the kill its about sitting out in your stand watching what noone sees from the highway or from the lazy boy. I just like being out there but i like bowhunting whitetails. what about you?

Favorite is feral hog hunted with a pack of dogs and harvested with a knife or a spear.  Hunting just like it was 10000 years ago.

Pheasant!! Cold mornings, sipping coffee waiting for the sun to come up over the mountains, watching other animals wander around in fresh snow...and finally getting out of the truck to walk the fields with your best friends & best dog...it's great. I can't wait till my little girl is old enough! That's going to be her first hunt!

Pound for pound, it's hard to beat the Mourning Dove. They are plentiful, but at the same time can disappear in the blink of an eye. They can find a hole in the shot pattern of the best hunter, and a 10 year old kid can make the most experienced hunter look bad. If you want a real challenge, try hunting doves with a single shot .410 shotgun. That's what I learned with, and it really makes you appreciate the challenge.

Leases don't cost much, a shotgun can be pretty cheap, and you don't need any special tools to clean and dress them. And if you take the breast, fold it around a slice of jalapeno pepper, wrap it in bacon, and grill it, you'll understand why God gave us taste buds.

ive hunted hog,white tail,turkey,duck,goose,and small game.

and out of all of that i have to say turkey.

i know that sounds funny but, they are harder to hunt then a deer. IMO
