Question:

Husband and I are having another couple over for dinner Sunday. What should we make?

They don't have food allergies. But Brittanny is veeeery healthy. She won't eat anything unhealthy-- not even pizza and chocolate on her period lol. Anyone have some ideas for healthy meals? Maybe pasta, chicken, pork chops? Thanks =)

  1. Pork chops are always a good idea, and if you get the ones that are about an inch thick, you can put a limited amount of butter in a pan and saute them for about 8 min on each side. You will want to season them with salt, pepper, and garlic. I personally put some Crystals hot sauce in the pan too with some worstishire sp? sauce as well. You could steam some fresh or frozen broccoli and make some rice pilaf. That is my fiance's favorite meal that I make. Good luck!

  3. Try grilled chicken with a pasta salad.

  4. Just double recipe.  Make a garden salad,and some dinner rolls.

    Make a light cake for dessert, or get one already done at a nice bakery.

  5. Make a grilled fillet of beef or pork and a nice green salad. You might want to ad a green vegetable like steamed green beans or broccoli. A slice of whole grain bread might be nice, Serve some frozen yogurt with fresh sliced peaches or strawberries topped with a little dollop of lite cool whip.  

    Then find some friends that want to go out to SPRLURGE occassionally!

  6. Here is a GREAT cold summer soup. It has a little sour cream, but no half & half or heavy cream you would usually find in a recipe like this. Besides, it's carrot soup, how unhealthy could it be ;-)

    chilled carrot soup with cumin and lime

    Servings: Serves 4+

    2 tablespoons olive oil

    2 pounds carrots, peeled, chopped (about 5 cups)

    2 large leeks (white and pale green parts only), chopped (about 2 cups)

    1 tablespoon chopped garlic

    3 1/2 teaspoons ground cumin

    1/2 teaspoon dried crushed red pepper

    6 1/2 cups (or more) canned low-salt chicken broth

    8 tablespoons sour cream

    2 tablespoons fresh lime juice

    2 tablespoons chopped fresh cilantro

    2 teaspoons grated lime peel

    Heat oil in heavy large pot over medium-high heat. Add carrots and leeks; sauté until leeks begin to soften but not brown, about 5 minutes. Add garlic; sauté 1 minute. Add cumin and crushed red pepper; sauté 30 seconds longer. Add 6 1/2 cups chicken broth. Bring to boil. Reduce heat and simmer uncovered until vegetables are very tender, about 35 minutes.

    Working in batches, puree soup in blender until smooth. Transfer soup to large bowl. Cool. Whisk in 6 tablespoons sour cream. Cover soup and refrigerate until cold, at least 4 hours or overnight.

    Stir lime juice into soup. Thin soup with more broth, if desired. Season with salt and pepper. Ladle into 4 bowls. Spoon 1/2 tablespoon sour cream atop each serving. Sprinkle with cilantro and lime peel.

  8. How about a nice pot roast with roasted veggies. I use potatoes, onions, celery, and carrots. Some yeast rolls and you are good to go!!

  11. How about pork chops with baked ratatouille with a baked sweet potato? It's all healthy, serve sorbet for dessert too =]

  12. Salmon is always very good.  You could serve it with brown rice and a garden salad or a cuke and tomato salad.

    For dessert I would serve fresh strawberries with a dip made of fat free yogurt (strawberry) and fat free cool whip - it is really good.
