As much as you like!  There are no hard and fast rules, but if you need a benchmark --- 1 cup of paneer cubes per person.

200 gms should be fine. lightly saute them and pop  them into the prepared palak sauce.

If u r talking bout the regular bunch available all over India then I suggest u make that at least 2 bunches. As what looks like a healthy amount uncooked reduces in quantity after cooking.

Though there is definitely no hard and fast rule as to how much 'Paneer' should be used about 200 - 250 gms should suffice. You could add more or less too.

That depends on how big the bunch of Palak is! You could use as much as two cups of panner or as little as half a cup.
