  1. INTERESTERIFICATION means mixing FULLY HYDROGENATED OIL with liquid POLYUNSATURATED oil to produce a consistency similar to PARTIALLY HYDROGENATED OIL.  Since partially hydrogenated fats are the source of trans fatty acids, which are regarded as dangerous to health (causing both cardiovascular disease and cancers), many food manufacturers are now labeling their products with interesterified oil as an ingredient in order to cheaply produce the same taste and textural qualities as partially hydrogenated (trans-fat) oils previously provided.  Unfortunately, fully hydrogenated oil is no more healthful than trans-oil.

    Interesterified oils can lower healthy HDL cholesterol and sabotage the body’s ability to use insulin, increasing blood sugar by 20 percent.

    To steer clear, avoid foods listing “fully hydrogenated oil.”
