I'd book with Sell Off Vacations.  You can book online or via an agent in town if that's what you're more comfortable with.  I've used them before and they always come up the cheapest!  

Go to their website, select Calgary departure, destination Mayan Riviera, tick the box for all inclusives, put in the date you want to leave and search!  The prices that come up are based on double occupancy, but when you select it you change the amount of travelers to 1 and set the occupancy to single.  I just did a sample date in January and 4* Riu Lupita came to  $1555.70 taxes in all inclusive for 7 days 1 person single occupancy, 3* El Tukan all inclusive 8 days  $1384 taxes in for one person single occupancy.  Be sure when you look at the price list to scroll all the way down as it will suggest alternate dates with cheaper prices.  If you don't have your heart set on the Mayan Riviera, try a Last Minute Deals search for everything out of Calgary.  There's 5* AI's in Punta Cana going for $1480, 3* Cayo Coco $508, 3.5* Puerto Vallerta $554 all for 7 or 8 days, add tax and single occupancy fee.  I've included the SOV location in Calgary below.  Have fun on your trip!
