To marry before a Sharia court in the UAE, the man must be a Muslim and the woman can be Christian, Muslim, Jewish or from any other religion. No reason to convert if you do not want to.

Being on a visit visa you cannot get married in the UAE.

Get married in Malaysia. That way your husband can take employment in the UAE and after receiving his residence visa he can sponsor you.
