  1. Tabouleh

    Ingredients

    2 bunches of fresh parsley (1 1/2 cup chopped, with stems discarded)

    2 tablespoons of fresh mint, chopped

    I small onion, finely chopped

    6 medium tomatoes, finely diced

    1 tablespoon salt

    1/2 teaspoon black pepper

    1/2 cup bulgur

    juice of three lemons

    6 tablespoons extra virgin olive oil

    Procedure:

    Rinse bulgur in water and add to a large mixing bowl. Combine all chopped ingredients, salt, pepper, lemon juice, olive oil, and stir. Cover with a clean dish towel and let sit for 1-2 hours or until bulghur is tender.

    Easy Baklawa

    Ingredients

    1 box phyllo dough, thawed

    1 cup butter, melted

    Syrup

        * 1 cup sugar

        * 1/2 cup water

        * 1 teaspoon lemon juice

    Filling

        * 1 cup finely chopped walnut

        * 1/2 cup sugar

        * 1 teaspoon cinnamon

    Directions

    Place 1 cup sugar, water,& lemon juice in a pan& bring to boil.

    Simmer for 5 minutes, stirring occasionally.

      Cool.

      Lay out phyllo dough, cut in half& trim to fit a 9 by 13" pan.

      Place 1/2 of dough in pan.

    Combine filling ingredients, and spread over phyllo dough.

      Cover with 2nd half of dough.

      With a serrated knife, cut into triangles.

    Drizzle evenly with melted butter.

    Bake at 350 degrees for appproximately 30 minutes, till golden brown.

      Remove from oven& pour cooled syrup over hot baklava.

Plus it depends on if you are good at cooking and what type of area you are in.. visit www.congocookbook.com to get african recipes but you would still need practice..Easy recipes would be some Kaboobs - that is middle eastern food and very simple. You can bring kaboobs, pita bread and flavored hummus. You can often find those items at any market...Arabic culture is highly influenced in Africa so the meals can represent both africa and the middle east

  5. i live in the middle east where we have a mixed culture of africa (zanzibaris) and the arab food..plus....the hint of indian culture...

  6. Bring sum cous cous and chicken with some pita brad and baba ghanoush, its a variety of good eats.

  7. This is easy, there are lots of choices:

    hummus, baba ghanouj, dolmas, tabbouleh, falafel, couscous, pita, tajines, moroccan bread, spicy chickpea salad.....

    just do a google/yahoo search, it's very easy!
