I'm baking a pina colada cake, what would make a good frosting with it?

thanks, I was thinking chocolate. I once eat a chocolate flavored pina colada...what do you think?

  1. Coconut and Cream Cheese Frosting

    2 8-ounce packages cream cheese, room temperature

    1 1/2 cups powdered sugar

    2 cups sweetened flaked coconut (about 6 ounces), divided

    Beat cream cheese, 1/4 cup butter, and remaining 1 teaspoon vanilla in medium bowl until smooth. Beat in powdered sugar; fold in 1 cup flaked coconut. Spread frosting on cupcakes, leaving 1/2-inch plain border; sprinkle with remaining 1 cup coconut.

    Piña Colada Frosting

    Frosting:

    1 can (8 ounces) crushed pineapple, undrained

    1/3 cup light rum

    1 small package (4 serving size) vanilla or French

    vanilla instant pudding mix

    1 container (8 ounces) Cool Whip

    coconut to taste, toast* if desired

    Frosting:

    Mix crushed pineapple, rum, and vanilla instant pudding. Beat until it thickens. Fold in 1 container of Cool Whip. Frost cake and sprinkle top with coconut or toasted coconut.

    * To toast coconut: Spread coconut in shallow pan. Bake at 350° for about 15 minutes, stirring frequently, until lightly browned.

    PINA COLADA FROSTING

    FROSTING:

    1 box (16 oz.) powdered sugar

    6 tbsp. butter, softened

    1/4 c. whipping cream

    1 tsp. vanilla

    1 tsp. coconut or almond extract

    1/4 c. drained, crushed pineapple

    1 tbsp. rum

    Shredded coconut

    Beat sugar, butter, cream, vanilla and extract in a large bowl. Transfer 1 cup frosting to a small bowl and stir in pineapple. Stir rum into remaining frosting in large bowl. Spread pineapple frosting between cake layers. Frost top and sides with remaining frosting. Sprinkle with coconut.

  2. Cream cheese frosting with toasted coconut with a hint of pineapple rum for flavor.

Just REAL whipped cream (about 2 c. heavy whipping cream with 1/2 c. sugar & 1 tsp. vanilla extract - beaten to very stiff peaks).  Then sprinkle sweetened (NOT toasted) coconut flakes over the top, and press against the sides.....  If it's a layer cake, pineapple would be a good filling (even pineapple preserves)  

    *** Chocolate sounds terrible with pina-colada cake

  4. A nice 7-Minute Frosting would work great on your cake.  You can sprinkle it with shredded coconut or toasted coconut.  Here's the recipe for the 7-Minute Frosting - it cooks for 7 minutes - hence the name.  It tastes kind of like marshmallows - light and fluffy.

    SEVEN MINUTE FROSTING

    2 egg whites

    1 1/2 c sugar

    dash of salt

    1/3 c cold water

    2 tsp corn syrup

    1 tsp vanilla

    Place the first 5 ingredients in the top of a double boiler.  Beat it with a hand mixer until well mixed.  Place over boiling water and beat constantly for 7 minutes - running a spatula around the sides every now and then as it cooks - or until it stands in peaks.  Remove from the heat and add vanilla.  Beat 2-3 minutes or until of spreading consistency.

    That frosting is excellent on a nice chocolate cake too.

    Or you could take a simple cream cheese frosting recipe and add some crushed pineapple to it and spread it on the cake.

    Coconut Pineapple Cream Cheese Frosting

    Ing:

        * 1 (8 ounce) package cream cheese, softened

        * 1 (8 ounce) container frozen whipped topping, thawed

        * 1/2 cup confectioners' sugar

        * 1 teaspoon vanilla extract

        * 1 (16 ounce) can pineapple pie filling

        * 1/2 cup flaked coconut

        * 1/2 cup chopped walnuts

    Dir:

       1. In a large bowl, mix softened cream cheese with whipped topping, confectioners sugar and vanilla. Mix well and frost cake with this mixture. Spread pineapple pie filling over frosting, sprinkle with coconut and chopped nuts. Enjoy!

    Coconut Buttercream  (reg. buttercream w/ coconut extract and coconut pressedinto the outside of the cake.

    I think chocolate would be gross w/ pna coloada cake.

  9. Cream cheese frosting with some rum extract.

  10. I would keep it simple.  Mix a tub of Cool Whip with a can of drained crushed pineapple and spread it on top.  Sprinkle some toasted coconut on top of that.
