I'm going to Cancun in May with my twin sister...what kind of fish can I catch?

We are staying all inclusive. I was told to definately check out the deep sea fishing...besides Xel Ha and Tulum. I think we decided to go fishing clear out from Cozumel. What kind of fish can I catch? My boyfriend was over in west Mexico (Matzalan) and caught Mai Mai. I'm pyched about the thought of catching something so big it will throw me off the boat...can my dream come true? Like catching a catch and release shark? :)
