I had the best vacation at The Royal in Cancun when I went.  It's an All Inclusive resort as well.

I had a great time at  Dreams Cancun Resort. they are located at the top of the hotel zone in the corner. beautiful beaches (2) calm water, great staff, good food. Very good location, near all the clubs.Stay in the tower rooms for the best views.

Hilton Cancún.  Spectacular beach and instalations.  Try also the Fiesta Americana Condesa.  They have the best breakfast buffets in all over Cancún.  Best luck.

We had a great time at the Riu Cancun.  It was all-inclusive, as many are, with good choices for food and drink.  The nicer restaurants there were Mediterranean and Japanese; you needed reservations for these.  There was an outdoor steakhouse that was very good, and another restaurant that did a different style of food every night (Mexican, Italian, etc).  All were very good.  

Breakfast was a buffet served in the latter restaurant, and lunch was a buffet at that same place or outdoors by the pools.  

There are several bars, all with friendly bartenders.  The activity staff works hard to keep everyone in a good mood and having a good time.  There were a lot of fun events throughout the day and night.

The pools were great, and some had lounge chairs in the pool, which was really nice.  One pool had the bar in it, which was also really nice.  

If we went back to Cancun, we'd definitely stay in the same place again.
