I took a cruise recently in that area and stopped in Athens, Mykonos, and Rhodes.  The best place for my money was Mykonos.  It had everything; shopping, nightlife, food, and a beach.  Although, I did not get a chance to check out the beach (we had to get back on the ship), I heard it was nice.  There is also a cool site to visit nearby.  It's an island called Delos.  It has a lot of ruins and stuff.  Probably a good half day trip.
