  1. Pasta salad. Just chop up some vegetables, cook some pasta and toss with olive oil. You can also add chicken if you wish.


  2. A salad for start.  Grill some porkchops or chicken along with some corn on the cob on the grill. Make some streamed seasoned veggies.

Something that is fast that I like to prepare when the weather is warm are pita bread sandwiches, and they are lite, depending on what meat you put in.  I like regular turkey, pepper turkey or roast chicken lunch meat...and the supermarket I go to sells pita shells.  You can fill the shells with anything, but I make a filling of:  shredded turkey or chicken deli meat, mixed salad greens, red onions, cherry tomatoes, green or black olives, and I coat the whole mixture lightly with lite Italian, Caesar, or balsamic viniagrette dressing.  These sandwiches can go great with macaroni or potato salad made with low-fat mayo or Miracle Whip.  

    Another idea is from a party I recently had outdoors to celebrate my grandmother's birthday.  We took a half of a watermelon (cut longways), hollowed it out and laid it down on top of ice with the green part facing up.  We stuck fruit kebabs, basically watermelon, honeydew, fresh pineapple, canteloupe chunks and strawberries (but you can use any fruit you like) all on a stick, into the watermelon in rows.  It served as both a dessert and a centerpiece to the table because it looked beautiful when we were done.  And if you're looking for lite, you can't go wrong with fresh fruit!

  5. We all know unhealthing things are the things that taste best! But what you should do is make a vegge tray, with some ranch as a snack, and a salad, with some stake and some sliced tomatos in vinergrette dressing, would make a good diner, and for desert, you could but some sweet fruits into some bowls with some cool whip! There you are.
