This is a Japanese dessert made with red beans and sugar and is topped with crushed or shaved ice.

  2. 3/4 cup red adzuki beans

    1 to 1 1/2 cups sugar to taste

    1 tablespoon arrowroot

    5 mochi (rice cakes)

    Wash and pick over the beans, put into a saucepan with 5 cups cold water. Bring to a boil, covered, over high heat, then reduce the heat to moderate and simmer for about 40 minutes, or until the beans are tender. Drain, set aside.

    Rinse out the saucepan and add the sugar with 1/4 cup water, stir to mix and cook, stirring from time to time, over low heat for 5 minutes. Add the beans to the syrup and cook, mashing the beans into the syrup with a wooden spoon or spatula until they form a smooth, heavy paste, about 30 minutes. Add 2 cups water, mixing well over moderate heat. Mix the arrowroot with 1 tablespoon water and stir into the beans. Cook until thickened.

    Cut each of the rice cakes into quarters and toast in a grill or under a broiler until lightly browned and tender. Put 3 pieces of rice cake into the bottom of 6 small bowls. Cover with about 1 cup of the bean paste. There will be 2 rice cake squares left over, a little extra for someone. Makes 6 servings.

  3. This one is actually a Malasian recipe. The zenzi recipes that I can find as well as those given by Desi Chef are served hot not on ice.  There are recipes for Adzuki bean ice creams.

    INGREDIENTS FOR ICE KACHANG OR SHAVED ICE WITH RED BEANS

    4 tbsp sweet red adzuki beans

    4 tbsp jelly in assorted colors (diced)

    4 tbsp preserved nutmeg fruit (sliced) - optional

    4 tbsp sweet corn kernels or creamed corn

    4 tbsp chendol jellies - optional

    4 tbsp crushed peanuts

    1/4 cup palm sugar syrup

    1/4 cup red cordial or colored sugar syrup

    1/2 cup evaporated milk or sweetened condensed milk

    Shaved ice

    Ingredients for Palm Sugar Syrup

    1/2 cup palm sugar shavings (or brown sugar)

    1/2 cup water

    1 pandan leaf (knotted)

    TIP: Sweet adzuki beans, preserved nutmeg fruit and diced jelly are all available in canned forms at any Asian supermarket. However, if you are unable to find them, you can subsitute with whatever canned fruits of your choice.

    Cendol or Chendol Jellies are short, green noodle-like strips which are made from rice flour. They are usually sold in packets in the cold section or you can find them in most Vietnamese bakery shops. However, if you are unable to acquire them, then omit entirely.

    Shaved ice is a MUST in this recipe. To make the shaved ice, simply crush ice cubes in a food processor or blender
