I'm looking for a Mexican rice recipe!?

My grandma made the best rice, but she's gone, so I'm looking to make it myself. I'm looking for the standard mild rice, like the kind they put in a combo enchilada platter. Thanks for your help!

  1. Bigeyes provided the best answer. There is no way a Mexican cook will add chili powder, and the paella recipe is Spanish, from Spain, we're talking origin, not language here...right?

    This Mexican rice is made with rice, onion, green bell pepper, garlic, tomatoes, and spices.

    INGREDIENTS:

    1/2 cup chopped onion

    1/4 cup chopped green bell pepper

    1 large clove garlic, minced

    2 teaspoons canola oil

    1 cup long-grain rice

    1 can (about 15 ounces) diced tomatoes with liquid

    1 teaspoon chili powder

    1/4 teaspoon ground cumin

    1/2 teaspoon salt

    1 1/2 cups beef broth

    PREPARATION:

    In a heavy skillet sauté onion, green bell pepper and garlic until onion is softened. Add rice to skillet and cook over medium-high heat until rice has browned. Add tomatoes, chili powder, salt, and beef broth.

    Bring to a boil; cover, lower heat, and simmer until liquid has been absorbed, about 20 minutes. Taste and add more salt if needed.

  3. rice, tomatoes, chili powder, onion, garlic, cilantro or cumin. skip the frozen veggies.  you could also use ROTEL as part of the liquid, gives a nice spicy flavor.

    Valencia is a region on the Mediterranean coast of Spain, between Barcelona and Murcia. There are as many versions of paella as there are cooks in Spain! Paella Vegetariana is a vegetarian version of Valencia’s signature rice dish. Instead of chicken or seafood, vegetables fill in and create a tasty and satisfying vegetarian rice dish.

    Because paella pans are very large round pans, they are not suitable for cooking on top of a standard burner. So, we recommend cooking paella on a round charcoal BBQ.

    INGREDIENTS:

    9 oz. White Flageolet Beans*

    9 oz White Beans

    2 medium tomatoes, diced

    4 cloves Garlic, finely chopped

    1 Large Eggplant, cut into large cubes

    1 large Green Bell Pepper, diced

    2 Artichokes or 1-16 oz can Artichokes

    4-6 cups of  Vegetable Broth

    Medium-Grain or “pearl” Rice

    PREPARATION:

    Serves 6-8.

    Note: If artichokes are not in season or you cannot buy them fresh, use a 16 oz can of artichokes, drained.

    *Flageolet beans are immature kidney beans and can be difficult to find in the USA.

    You may substitute canned for the fresh beans, in which case you do not need to soak them. If you cannot find them in stores, use any similar white bean.

    Gather the Equipment

    Round charcoal BBQ

    Charcoal

    Medium sauce pan

    Sharp knife for chopping meat and vegetables

  6. 1 cup rice

    2 cups water

    1/2 medium onion, chopped

    1 clove garlic, chopped

    1 teaspoon cumin

    1 square of chicken bouillon

    salt/pepper to taste

    Brown the rice. Add onion and saute until translucent. Add the garlic and saute for a minute. Add the water, cumin, bouillon and salt and pepper.

    Bring to a boil. Cut down to a simmer. Put a tight fitting lid on the pot and time it for 15 minutes. When time is up remove from heat but do not remove lid. Let sit for 5 minutes then enjoy!!

    I always use this recipe for my family and it's our favorite!

  8. My husband is from mexico and this is how I have learned to make this recipe.

    4 Roma tomatoes

    1/2 onion

    1/2 cup cilantro

    1 teaspoon lime juice

    3 mexican style pickled jalepenos

    a pinch of oregano

    1 cube chicken bullion

    1 clove garlic

    1/4 cup oil

    1 cup mahatma rice

    Take the tomatoes, onion, lime juice, cilantro and peppers and puree in blender. Take a pan and add oil and slice garlic into the oil and fry until golden brown. When garlic is done take it out and add rice and fry until lightly browned, while the rice is frying take 2 cups of hot water and add bullion cube and let desolve.

    When the rice is browned add the two cups of water and bullion to the rice and 2-3 tablespoons of the salsa into the pot and add a little oregeno and let boil until done. Its no like the restaurant but it is good!!!!!
