I'm looking for a clear jerk sauce to add to jerked chicken?

While in Jamaica for vacation, we had multiple different versions of jerk chicken. My favorite was homemade, and it was dry when you picked it up out of the tin it was served in, but they gave you two sauces with it, one of them was almost clear and they called it the "hot" jerk sauce. I'm assuming it was made with apple cider vinegar, and like I said, was mostly clear in color. It definitely had some kick, but was still a subtle kick (it was great!) Does anyone have a recipe for such a sauce, or could point me to such a recipe?

  1. In Suriname they have something similar. When you purchase fried rice or any other dish, they serve raw onions with also a clear sauce. They call it pica. Try in that direction.

In the South (like Mississippi, where I grew up), there was always a container of hot sauce on the table.  It was made by simply stuffing a bunch of small, hot peppers (red or green or a combo) into hot sauce jars (small, empty glass ketchup bottles are good) and pouring in boiling white or apple cider vinegar.  Let stand for a couple of days or more to release pepper flavor into vinegar.
