There is no such univeral cable.  HDMI cables carry digital video and audio signals.  Component video cables carry analog video signals.

There are video switching devices and AV receivers that will allow you to switch between multiple component signals or multiple HDMI signals.

You can't change the cables leads. You either get an HDMI cable, or a component, or composite, etc. Each device you connect needs its own cable.

well.. thats kinda impossible.. hdmi is digital.. component, svideo and the yellow rca plug is analogue..

there is a solution however.. there is this surround receiver that will up-convert from the lower end cables to hdmi or component.
