You could work on your interchange between your two hands.  At higher levels of play you will see players using both hands, or at least having a good amount of dexterity with their off-hand.  The exchange has to take place without touching the ball with both hands, as i'm sure you know, two hands on ball is a foul.  I would sit in my room for hours bouncing my ball off the wall catching with the throwing arm, exchanging at the face, and throwing with the off-hand. Another dexterity excercise is to juggle the ball between both hands using your fingertips.

    I used to practice balancing the ball in my hand, and exchanging when I couldn't take the burning in my shoulder any longer :).  A polo player should always be in a ready position, with the ball in the air, ready to shoot or pass.  This should help condition those muscles.

    I'd also suggest you incorporate running into your conditioning routine, as well as lifting weights if you are able to get into a gym.  This should put you a little bit in front of your competition.  Hope that helps :)
