But I don't have any and it is too short notice to get some now, I have never used it before. Is it a bit like a yoghurt? because I have some apricot yoghurt...could I use this as a substitute?

thanks

  1. its pretty much nothing like apricot yogurt.

i dont think u should use the yogurt.

if u have some peaches lying around in ur kitchen, u can make the compote yourself.

just peel and chop the peaches. remove pit of course, stew in a sauce pan and let it release its liquids, add about 1/2 cup water and 1/3 cup sugar and some lemon or lime juice to bring out the sweetness..simmer until you get your compote, or until u notice its smoother and not as chunky. voila.

  2. It's more like stewed apricots or an apricot sauce.  If you have some dried apricots, chop them up and put them in a bowl with some boiling hot water and then let them "stew" until back to room temp.  If you have some fresh or canned apricots, just chop them up (including some of the juice) and you'd be close to apricot compote.

If you're going to use the yogurt, it will have a creamier texture that may or may not work with your recipe.  I don't have enough info from you to answer if the yogurt would work.
