Question:

I'm making chili tonight.... any tips, suggestions, recipies.

I'm making chili for my first time tonight, for my fiance... I'm a pretty good cook and can follow any recipie, it's just finding the right one. So far I have no recipie for chili, so I was just going to follow the instructions (on the chili flavoring packet) and add a few odds & ends in... but I'm not sure. Maybe there are things I can add that Im not thinking of....

For my chili I have... hamburget meat, kidney beans, chili seasonsing. If I follow the recipie on the chili seasonsing, this is all it calls for.

However, I'd like to make it a little more elaborate...any ideas of what I can add to make it taste more flavorful, but not too add too much more time to preparation and cooking?

In my fridge I have jalapeno pepppers (im thinking of adding those, because I like a lot of spicey foods).

I have some spices on my spice rack and things in the fridge like salsa.

ANY RECIPIES OR TIPS WOULD BE GREAT. EVEN IF IT'S NOT SOMETHING I CAN USE THIS TIME, MAYBE I CAN TRY A DIFFERENT CHILI NEXT TIME?!? THANKS IN ADVANCE!! :)

  1. always use fresh vegetables and herbs, i find fresh herbs and spices are a lot nicer than dried if you want a nice hearty chili. the fresher the herbs and spices, the better the flavour, texture and colour will be !!

  2. This is a 5 star recipe, I've made it twice already and it's so good and easy.



       *   1 pound ground beef

        * 1/4 onion, chopped

        * 1/2 teaspoon ground black pepper

        * 1/4 teaspoon garlic salt

        * 1-1/4 cups tomato sauce

        * 1/2 (8 ounce) jar picante sauce

        * 2 tablespoons chili seasoning mix

        * 1  (15 ounce) can light red kidney beans

      

       1.   In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.

       2. Add the ground black pepper, garlic salt, tomato sauce, picante sauce, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

  4. I sometimes use the chili package but if you stock chili powder in you pantry your good to go. I add tomatoes in the can, diced green pepper, onion, garlic, salt pepper,tomatoe paste, chili beans and depending how I feel I will add spicy seasonings.I like to experiment so sometimes I also add a little bar b que sauce.

I would start by browning the hamburger in a big pot.  Then add chili seasoning...... chopped bell peppers, onion, and celery.  Cook for about five minutes,  Then add some of the jalapenos and a can or two cans of chopped tomatoes.  Let stew for about 10-15 more minutes.  Then towards the end...... add your kidney beans.  You do not want to add the kidneys to soon.... because all the really need is to be warmed.  I like to serve this recipe with a little elbow mac mixed into the bowel.  Its sorta like a chili make..... but delicious.  Then sometimes I will top my bowel with a little cheddar cheese or sour cream..... yum!

Sometimes I add corn to my chili and it's always yummy.  You can use canned, fresh or frozen.  I also like to boil up some macaroni noodles and put them in my individual bowl.  If you add them to the whole pot they seem to get too mushy for my taste.  I add anything and everything to chili.  I like to add a dallop of sour cream and shredded cheese to my individual bowl too. :)

  8. Well, you've already got a chili mix, so you're not really looking for recipes...

    The jalapeno is a good choice, I usually add one or two, or a couple of serrano peppers. I also doctor the chili with a medium onion and garlic (sauteed together before cooking the ground beef), a couple of bell peppers (green and yellow for color), and a nice ale. I personally use Newcastle (only because that's what I drink and have on hand), but almost any beer will do. Imparts a nice maltiness tot he chili, and if you simmer it long enough, most of the alcohol will cook out.

    When I cook chili, it take about 2-3 hours (got to let the flavors meld together), so I don't add the beans until the last 10-15 minutes. They do not take a lot of time to cook, and if you put them in too early, they'll break apart and become mush.

    2. cut off all your toes and put it in with the tomatoes

    3. add 427 pounds of beef in

    4. stir till soft

    5. pour 92 cups of corn starch in

    6. stir

    7. pour beans in

    8. stir

    9. eat your delicious meal!

  11. you have the basics... Id suggest stewing a chicken breast in some chicken broth then shredding it.  toss the shredded chicken into the chili instead of the same ole same ole hamburg.... but either way works.

    My only suggestion is Shriracha Chili sauce.  Its got a green cap and a picture of a rooster on the front, its vietnamese sundried chili sauce and its AMAZINGLY tasty and not just heat, like your normal chili sauce or god forbid, Tobasco.  

    throw in black beans too.  

  12. Farmhouse Sausage Chili

    1 pound roll pork sausage

    1 onion, chopped

    2 cans (15 oz) diced tomatoes

    1 can Chicken Broth

    1 can (15oz) tomato sauce

    1-2 Tablespoons maple or pancake syrup

    1 ½ teaspoons sage

    2 teaspoons cumin

    ½ teaspoon black pepper

    3 cans Kidney Beans, drained

    1. In large skillet, brown sausage and onions; drain

    2. Add diced tomatoes, broth, tomato sauce, maple syrup, cumin, sage and black pepper; stir until well until well blended.

    3. Simmer for 20 minutes.

    4. Add beans and simmer for additional 15-20 minutes.

    5. Serve topped with shredded cheddar cheese.

  14. Tinned/pureed tomatoes are a necessity for this otherwise it will be very bland. Maybe a little bit extra kummin than is in the seasoning 'cos it's just so good. Some people put sweetcorn kernels in there but I think that's a bad idea. Jalapenos could be pretty nice, and maybe some sort of capsicum but doing that tends to just distract from the nice spicy flavour.

    DEFINITELY if you weren't going to already put a nice big dollop of sour cream on top of the chilli when you serve it or at least some natural unflalvoured yoghurt if you don't have any sour cream. Get some very crusty white bread to scoop up the chilli with and wipe the bowl with when you've nearly finished. Mmmmmm man I'm hungry now.

  15. Instead of just adding hamburger, I like to mix sausage in as well.

    Make sure to have some shredded cheddar to sprinkle on top also!!

  16. sounds like a nice base.. but add some stuff to that for flavor!

    -i would recommend diced onions and bell peppers- whatever color you'd like. I would add these towards the end of browning the beef.

    -salt, pepper, dash of vinegar, tsp cumin, and a pinch of crushed red pepper flakes.- add this right to the meat and veggies, stir over med/high heat for a couple minutes to bring out the flavors.

    -then i would add a couple cans of crushed tomatos, and probably 2 tbsp of tomato paste.

    -Also, I would add about 2 cups of water with a couple buillion cubes or 2 cups of beef or chicken stock.  At this point, I would also give it a big squirt of ranch dressing!

    -Lastly, add the beans and a can of sweet korn kernals (or a cup of frozen is fine)

    - turn the temp down to low and let simmer uncovered for as long as you can wait... the longer the better.
