do shish kabobs, i think its very classic and perfect and best of all you can make many different kinds, and its way less messy for people to eat in your new home!

Taco buffet sounds like a good idea.  To shake things up instead of doing only beef, also put a thing of chicken on the table too.  Make sure to have soft and hard shells. Also all the extras like masorella cheese & also the liquid cheese, sour cream, rice, tomatoes chopped up, lettus, mild & hot sauces, avacado!  Also it'd be cool to have some chips & salsa (to kind of stick to a little theme)
