  1. For breakfast, i usually have a bagel with soy butter, cereal with soymilk, and some chocolate soymilk (sometimes coffee). Sometimes I like to have tofu scramble. I crumble to tofu real small in a pan and mix in mustard, nutritional yeast, and soy sauce. I also like banana muffins.

    For lunch, alot of times I pack a salad (with spinach, squash, zucchini, and cucumber) and a piece of fruit. Sometimes I bring soy yogurt or bring a soy chicken burrito or something. I usually drink water at lunch.

    As a snack when I get home, I like to have banana smoothies and banana bread (or zucchini bread). I also enjoy frozen bananas.

    dinner varies. Sometimes I make chili with tomato sauce, different kinds of beans (usually kidney and black beans), corn, and sometimes olives. I also like tacos with refried beans (I find it fun to make them from canned beans) and brown rice. Sometimes I have potato questadillas. I put a peeled potato in the microwave with water in a bowl untill it is soft enough to smash. Then I mix it with salt and pepper, and smear on a flour tortillla. I pour some vegetable oil in the pan and fry it and eat it with salsa. Vegetable and tofu stir fry is also good.

    If I want something for dessert, I like banana breas, zucchini bread, and soy icecream (but not all at once).

    INGREDIENTS

    For the tomato relish:

    15 sun-blushed tomatoes

    2 garlic cloves, crushed

    Large handful of fresh basil leaves

    Large handful of fresh thyme leaves, finely chopped

    About 2 T extra virgin olive oil

    For the avocado butter:

    2 ripe avocados

    Juice of 1/2 lime

    1-2 dashes of Tabasco sauce

    Salt and pepper to taste

    4 small foccacia breads, halved

    METHOD

    Make the tomato relish:

    Put the tomatoes and garlic into a bowl. Stack 6 basil leaves together, roll into a cigar shape and slice into thin strips. Repeat with the remaining basil leaves. Mix the basil and thyme into the tomatoes. Stir in enough oil to make a relish texture.

    Make the avocado butter:

    Slice the avocado in half lenghtwise and remove the stone. Peel the avocado, then chop the flesh and put in a food processor. Add the lime juice, Tabasco sauce to taste and season with salt and pepper. Process until smooth.

    Cut each foccacia in half widthways. Spread a layer of avocado butter on the halves, top with tomato relish and cover with the remaining halves.

    Ingredients:

    1 brick tofu, pressed and drained to remove excess water

    1/4 cup mayonnaise, vegan or regular or similar type dressing

    1 tablespoon Dijon or prepared yellow mustard

    1/2 teaspoon cayenne pepper or paprika (optional)

    1/4 teaspoon turmeric

    1/2 tsp. powdered garlic or garlic salt

    1 stalk celery, minced

    1/4 cup diced green onions or scallions

    salt and pepper, to taste.

    Instructions:

    In a medium bowl, mash drained tofu with a fork or potato masher

    Mix in mayonnaise and mustard; add spices and veggies. Mix well, but carefully as to not break up the tofu too much.

    Let sit for an hour or two in the fridge while you pack your picnic basket for the best flavour.

    Serve with dark crusty bread, such as rye.

  3. For breakfast I have the same thing as I always had.  I have fortified breakfast cereal or hot oats with soy milk and maple syrup...or my favorite:  A blueberry bagel toasted with some tofutti better than cream cheese and strawberry jam!!  MMM...

    For lunch I like peanut butter and jelly or a pb and rice mallow sandwich.  Sometimes I have left overs from the night before.

    For dinner I make my family things like smart dogs and baked beans, vegan chili and cornbread, vegan pasta and sauce, vegan mac and cheese, vegan tacos, vegan sloppy joes, vegetable soup, vegan pizza, or sometimes I will just lay out a buffet of every vegetable I have and let my kids pick the vegetables they want on their rice.

    For snacks we eat nuts, fruit, soy yogurt, crackers with soy cheese, peanut butter bananas, more hot oats, Popsicles, and a ton of other stuff :)

    In the beginning it was a little hard, but it was worth it for the animals.  Just make sure you get enough calories and nutrients.  Most of the dinner items I listed have vegetable protein, and soy milk is a must.  It is worth it.  It helps your own health, animals, and the environment.  It also tells people in the meat industry that you won't support their horrific ways!

  5. That's great you're considering veganism. I usually enjoy vegan versions of non-vegan meals. For instance, BLTs with soy bacon, quesadillas with soy cheese, and subs with vegan deli slices. Here are some ideas:

    Breakfast:

    Cereal with soymilk

    Toast or bagel with peanut butter or vegan butter (such as Earth Balance)

    Oatmeal with fruit or maple syrup

    Scrambled tofu

    Soy yogurt with fresh fruit

    Fruit smoothie

    Lunch and Dinner:

    Veggie burger with tomato slices

    Falafel wrap with lemon tahini dressing

    Sub / hoagie with vegan mayo and vegan deli slices (like Tofurkey Deli Slices)

    Veggie chili with mixed green salad

    Vegetable stir fry with Morningstar Farms Meal Starters Chik'n Strips

    Spaghetti, tomato sauce, and Nate's Meatless Meatballs

    Black bean burrito

    Vegetable lasagne with mock ground beef

    Roasted vegetables and mashed potatoes

    Pizza, quesadillas, and grilled cheese with vegan cheese

  7. buy a vegan cookbook and that will help you. Breakfast -fruit and stone ground oats. lunch -salad lots of veggies/beans /fruit for snack. dinner: tvp, pasta and red sauce. Its a lot of work tried it hard to stay with also have tried raw food diet. Best thing to do is research it a lot.

  9. Yo, there are vegans from every corner of the world in every country from every culture... so... there are no rules to what you can or cannot eat for breakfast... eat whatever you want.  Have dinner for breakfast and breakfast for dinner... doesn't matter.
