Cambodia - ok...its not the first place people think to vacation but it is one of the best places I have ever been.  If you like history go to Siam Riep and visit the Angkor Wat temples by day and explore Siam Riep by night.  It is REALLY affordable.  We stayed here:

There are great places to eat...chinese, french, italian, cambodai, vietnamese....good bars.....you'll meet lots of other tourists and you'll see a part of Asia that is not as spoilt as others - especially if you explore any of the other areas of the country

Have you been to New Orleans?

I took an extended weekend trip there a few years ago, and it was the best time ever!

There is a lot to see and do. The food is excellent, the drinks are yummy! The hospitality is exceptional.

We did a night time Vampire tour/walk. It would seem kind of touristy, however, they give you a lot of the history of the city. The architecture is something to see!

New Orleans is just a lot of fun, you won't be bored, that's for sure.

The two suggestions above me are EXCELLENT (New Orleans and Cambodia) -- either one of those would be great.

I'll also recommend Argentina -- Buenos Aires is fabulous and cosmopolitan; the natural areas (Patagonia, Iguazu Falls, Bariloche) are breathtaking, the people are lovely, and the peso is low so your money will go far.
