What is the MINIMUM validity period I can have on a British passport to ensure entry into the country?

Minimum of 6 months- better to go with at least 9 months if you want to go into China. Go at the end of March and try to get tickets for the Hong Kong 7s, even if you dont like Rugby, the place is kicking, a melting pot of rugby fans from all over the civilised world (anywhere they do rugby) Drinking games galore. Then go shop, markets, designer stores, its got the lot. And lastly a huge plug for DELANEYS, the best beer in Hong Kong (Kowloon too). Have fun.
