how can i ask in a polite way for each guest to bring a bottle of his choice

Just put on the invites that it's BYOB (bring your own bottle) or specify this when you call people to invite them.

I would just put it on the invites.  You could even put a small list to tell people what some of his favorites are.  Enjoy the party!!

Say on the invitation that water & soft drinks will be provided.  If those sots have to have their booze, then they'll bring it.
