I've got two resume-related questions.

My first question: is it okay to add to your resume any menial-but-important tasks that you've done?

Second question: even though the interviewer has not requested it, can I also submit a cover letter?

Yes you include all your duties, no matter how menial you may think they were, just try to word it professionally.  And yes, you can have a cover letter even if the interviewer doesn't request it.  SInce you have the interview and know what the job is make your cover letter specific to the job, a generic cover letter is not needed when you already have the interview.
