  2. Wait until you try this diet coke cake!  You won't believe it!

  3. Most of the things you mention are high calorie, or all that healthy if made in the regular manner.

    This is a Diabetic recipe

    Fresh Raspberry Tarts

    (makes 4 servings)

    1/4 cup (52 g) part-skim ricotta cheese

    2 tablespoons (60 g) reduced-fat cream cheese, softened

2 tablespoons (8 g) reduced-fat frozen dairy whipped topping, thawed

1/2 teaspoon (2.5 ml) grated lemon zest

1/2 teaspoon (2.5 ml) grated orange zest

    4 3/4-ounce (22.5 g) graham cracker tart shells

1 cup (124 g) fresh raspberries, rinsed and drained on paper towels

4 fresh mint sprigs for garnish

Using the back of a spoon, force the ricotta cheese through a fine sieve. Combine with cream cheese, dairy topping, lemon zest, and orange zest.

Spoon mixture equally into tart shells and refrigerate for at least 1 hour.

When ready to serve, arrange raspberries over the cream mixture. Garnish with a mint sprig and serve.

    Per serving: 170 calories (48% calories from fat), 4 g protein, 9 g total fat (3.5 g saturated fat), 18 g carbohydrates, 2 g dietary fiber, 10 mg cholesterol, l171 mg sodium

    Diabetic exchanges: 1 carbohydrate (bread/starch), 2 fat

  4. It's not as hard as you think it is. I'm sure you could pull it off no matter what you make.

I would stay away from pies/tarts. I've baked for awhile and still don't have anything like that down. Pie shells are just....a headache waiting to happen :-)

A cake would be nice. Maybe a bundt cake or a pound cake with a nice glaze. Icing a cake can be tricky (not to mention, messy) so something with a glaze would be perfect for a beginner.

  5. chocolate dipped fruit..... so so so easy, just take a heat proof bowl and place it over a small pot half filled with water ( not touching the bowl ) and add your chocolate let it heat on very very low heat try to keep the water from boiling too hard when its all melted dip fruit or what every you could imagine, i saw on foodtv bacon and nuts and everyone enjoyed it, you could go more practical and do bananas or strawberries what ever you like just make sure after dipping to let it set up in the freezer and in most home fridges it wont keep for more then 1 day so make it that day

  6. How about a Punchbowl Cake? If you don't have a punchbowl, any pretty glass bowl will do.

It's layers of cake, fruit and lite Cool Whip and you can alter the recipe to suit your personal tastes. Put out some small plates and forks and let the guests serve themselves.

  7. an angel food torte.

    get a pre-baked angel-food cake (low calorie)

cut the cake into thirds, so you have a top, a center and a bottom

lay the bottom in a clear, glass container

drizzle fruit juice to make the cake moist.

    top with vanilla pudding

add one layer fresh fruit slices(strawberries, bananas, bueberries, kiwi, etc.)

add middle layer of cake & repeat with another fruit

add top layer & repeat. it's easy, but looks elegant & tastes delish! hope this helps

  8. PISTACHIO SALAD

TAKE PISTACHIO PUDDING MIX (DO NOT PREPARE IT USE THE POWDER)

ADD IT TO COOL WHIP MIX THOROUGHLY THEN ADD A CAN OF DRAINED CRUSHED PINEAPPLE SUPER GOOD AND SUPER EASY
