  1. if you like Rubens there is this really good dip:

    Hot Reuben Dip

    1 – 8 oz. cream cheese, softened

    ½ cup sour cream

    2 Tbsp. ketchup

    ½ lb. deli corned beef, finely chopped

    1 cup sauerkraut, chopped, rinsed and drained

    4 oz. shredded Swiss cheese

    2 Tbsp. finely chopped onions

    Snack rye bread or crackers

    In a mixing bowl, beat cream cheese, sour cream and ketchup until smooth. Stir in the corned bee, sauerkraut, Swiss cheese, and onions until blended. Transfer to a greased 1 qt. baking dish, cover and bake at 375 degrees for 30 min. uncover bake 5 minutes longer or until bubbly. Serve warm with bread or crackers.

    Hash brown casserole

    1-32 oz. bag ore Ida hash browns

    ¾ cu melted butter

    ½ cup chopped onion

    1 can cream of chicken soup

    1 cup sour cream

    1 cup grated cheddar cheese

    2 cups corn flakes crushed

    Use ½ cup butter & cook onions until tender. Mix onion & butter, potatoes (thawed), soup, sour cream, & cheese. Pour into casserole. Bake 1 ½ hr. at 325 degrees. Covered with foil for 1 hour then remove. Add corn flakes mixed with ¼ cup. Margarine over top & bake remaining ½ hour.

A simple but rich and elegant dish for a party is the following : you need two flaky pastry crusts, put one into the pan, line it with slices of smoked salmon, then grate a raw zucchini squash over the salmon. Then proceed to sprinkle with a few cups of grated cheese and then dabs of sour cream. Cover with second flaky pastry crust and make slits in top in star form, then bake in hot oven until pastry crust is golden, let cool, slice and serve, it is a wonderful dish.

  3. CRAB STUFFED MUSHROOMS

    INGREDIENTS:

        * 1 pound large mushrooms

        * 6 tablespoons butter

        * 3 green onions, minced

        * 3 to 4 tablespoons minced red bell pepper

        * 4 ounces crab meat

        * 1 cup fresh fine bread crumbs

        * 1/4 teaspoon salt

        * 1/4 teaspoon Cajun or Creole seasoning blend

        * 1/8 teaspoon pepper

        * 2 tablespoons Parmesan cheese

    PREPARATION:

    Wash and trim the end of stems from mushrooms. Pop remaining stem out. Chop stems and set aside. Melt 2 tablespoons butter; brush over mushrooms. Spray a shallow baking dish (about 8-inch square, or one which will fit mushrooms in one layer) with butter-flavored spray or grease with butter.

    Melt remaining butter in skillet; add reserved chopped stems, minced green onions and red bell pepper. Cook until vegetables are tender. Combine cooked ingredients with bread crumbs, crab meat, and seasonings. Fill each mushrooms, piling up. Sprinkle each mushroom with a little Parmesan cheese, if desired. Bake at 350° for 15 to 20 minutes, until hot and mushroom caps are tender.

    Makes 16 to 20 stuffed mushroom appetizers.

    Ingredients

    3 cups flour

    2 Tbsp. olive oil

    1 Tbsp. mixed spices (oregano, basil, onion flakes)

    1-1/2 cups warm water

    1 Tbsp. dry yeast

    cornmeal

    3/4 of 1 pint homemade tomato sauce

    1/2 tsp. oregano

    1/2 tsp. basil

    1 Tbsp. brown sugar

    toppings as desired such as: pepperoni, olives, mushroom, onion, etc.

    sundried tomatoes, optional

    3/4 lb. mozzarella cheese, grated

    Method

    Mix spices into flour and add olive oil. In a separate bowl, sprinkle yeast onto warm water. Let rest for 5-10 minutes. Add water to flour mixture. The dough should be soft, not sticky. Depending on the humidity of the day you can adjust the flour and water. Put dough in bowl and let rise until double. Add a handful of cornmeal to the dough, working in gently til dough is coated with cornmeal.

    Grease pizza pan liberally with olive oil and grease your hands too. Spread out dough on pan. Bake dough by itself in oven at 350° for about 10 minutes. Dough should not get too brown. Take out of oven.

    Mix ½ tsp. oregano and ½ tsp. basil with tomato sauce. Spoon sauce over dough. Sprinkle with 1 Tbsp. brown sugar. Layer with desired toppings. I like to add sundried tomatoes. Top with mozzarella cheese. Bake at 350° until cheese is golden brown. Let stand 5 minutes. Makes 1 large pizza.

    Ingredients

    1 cup persimmon pulp

    3/4 cup shortening

    1 cup sugar

    1 egg

    1 tsp. baking soda

    2 cups flour

    1 tsp. baking powder

    dash of salt

    1 Tbsp. vanilla

    1 tsp. cinnamon

    3/4 cup chopped nuts

    3/4 cup coconut

    3/4 cup raisins (optional)

    Method

    Simply mix all the ingredients together well and drop onto a cookie sheet by the spoonful. Bake in a 350° oven for 15-20 minutes. These are even better on the second day... if there are any left.

    ! bagget loaf

    Borsin cheese Or herbed Ceam chz

    1 cucumber

    1 package of smoked salmon thin sliced

    cut bread into little rounds and toast in the over

    spread good amount of borsin cheese on  toasted bread

    peel and de-seed cucumber slice into half moons and place on top of cheese

    place good  amount of smoked salmon on top of the cucumber

    serve

    Another hit is mini beef weligtons

    frozen puff pastry 1 pakage

    1 steak preferably a NYor Tenderloin

    assortment fresh mushrooms

    brandy

    heavy cream

    take the steak and cut into 1 to 2 inch  cubes

    sear over really hot heat for 1 min each side salt/peper/garlic

    remove from pan and let set for 5-10 min

    chop mushroom and saute on med high heat in butter in the same pan add salt/pepper/garlic

    deglaze pan with 1/2 cup of brandy BE CAREFUL it will ignight let brandy reduce add 2 tbl spoons of heavy cream stir let stand and cool for 10 min.

    take puff pastry and cut 1/3 of it off put rest back in freezer

    roll pastry out to twice its size. you want it to be pretty thin

    cut it so the piece of steak will be completly be covered  in the piece of pastry

    place steak in the middle and put some of the mushroom mixture on top

    try not to get too much liquid you should have cooked most of it off though.

    take some egg wash 1/2 water 1/2 egg whipped together

    and brush it on the pastry edges to seal place on sprayed cookie sheet and seal side down brush the top with the egg wash

    place in preheated 400 degree oven for 10 mins or untill colden brown

    serve hot or  room temp.

    You could do an antipasta plate too

    cold cured meats/assortment olives/cured peppers/ chilled grilled veggies with olive oil and garlic
