I Need to bring a western/cowboy themed covered dish to a party?

  1. TEXAS HASH

    1 lb. lean ground beef

    3 large onions, sliced

    1 large green pepper, chopped

    16 oz. tomatoes.. reserve juice

    6 oz. reserved juice plus water to equal 3/4 c. liquid

    1/2 c uncooked rice

    1/2 tsp. chili powder

    1 tsp. salt

    1/8 tsp. pepper

    Heat oven to 350.  In large skillet, brown beef & drain off fat.  Add onions & green pepper;  cook and stir until onion is tender. Mix in rest of ingredients.  Pour it all into a 2 qt. casserole dish.  Cover and bake 1 hour.......  serves 4-6  .....  Can put some corn chips on top when it's done, if you want

  3. Aunt Gail's Baked Beans & Hotdog Casserole

    1 large can baked beans (any brand)

    1 small chopped green pepper

    1 small chopped onion

    4 cut up (coin sized) hot dogs

    2 tbs honey (or syrup)

    2 tbs brown sugar

    1 tbs hot sauce (Louisiana Hot Wings or Tabasco)

    Mix everything together in large bowl, Cooking Spray foil casserole dish (so you can leave it behind at the party) and pour in mixture.  Top with decorative sprinkles of green pepper and onion.  Bake at 350 for 45 minutes.

    Voila....a WONDERFUL tasting, cowboy style meal!  Serves 4-6

    Use melted Velveeta Cheese here instead of the cheese dip in a jar, you can add seasonings to the Velveeta

    Also my son makes this dip with velveeta cheese, salsa and refried beans.  Combine the three and microwave them and serve with tortilla chips.

  6. Smoked Smokey Saucey Cowboy Beans

    Ingredients

    110 ounces canned pork and beans in tomato sauce

    1 white onion, chopped (or yellow)

    2 cups sweet barbecue sauce

    1/2 lb beef cooked brisket, diced (smoked)

    3 ounces wood chips (hickory or mesquite)

    Directions

    1Open beans and drain off excess fluid from top of beans, do not drain or rinse.

    2In a large mixing bowl add beans, onions, sauce and brisket and stir until well blended.

    3Find a large baking dish that will fit inside smoker or you may use 2 smaller dishes.

    4Pour mixture into a glass baking dish and place in smoker oven. Or bake in the oven 300 for 1 1/2 hours.

    Remove, STIR WELL and serve hot.

    You may substitute pork or ground beef.

    Smoked BBQ Rice

    1 1/3 cups rice

    2 2/3 cups water

    1 stick butter -- melted

    1 cup celery -- chopped

    1 medium onion -- chopped

    2 cans cream of chicken soup

    2 cans chicken broth

    1 teaspoon liquid Barbecue Smoke®

    1/4 teaspoon garlicpowder

    salt and pepper

    Bring white rice and water to a boil. Cover cook on low 18 minutes. Donot open during cooking.. Should yield 4 cups cooked rice.

    In a heavy skillet add butter, celery, onion

    Cook until onion and celery are clear.

    ADD: cream of chicken soup, chicken broth, Hickory Liquid Smoke and pepper to taste

    Bring to a boil.

    ADD: cooked rice, Garlic salt

    Pour into a buttered casserole dish.Bake at 350 degrees for 30 minutes.Great served with barbeque, baked chicken, pork roast etc.

    Classic Easy Guacamole Recipe

    INGREDIENTS:

    3 ripe avocados, peeled and seeded

    1 teaspoon ground cumin

    1 Roma tomato, seeded and diced1/2 cup minced sweet onion

    2 serrano or jalapeno peppers, seeded and minced

    1/4 cup chopped cilantro leaves

    lime juice from 1 lime

    Hot red pepper sauce, sea salt, pepper to taste

    Cut avocados into large chunks and mash coarsely in large bowl with a fork. Add remaining ingredients and blend gently - leaving some small chunks is fine. Taste and adjust seasoning with more pepper sauce, salt and pepper if desired.

    Serve with tortilla chips

    Texas Cornbread Pudding

    1/2 cup diced yellow onion

    1 1/2 cups fresh cut corn

    1 tablespoon vegetable oil

    4 eggs

    2 cups whipping cream

    6 cups crumbled cornbread

    1 1/2 cup shredded jalapeno jack cheese

    1 jalape�o sliced (more depending on taste)

    Salt and pepper to taste

    Heat oven to 300 degrees F.Saute onion and corn in oil until onion is translucent.

    Combine eggs, cream, cornbread, 1 cup cheese, and onion-corn mixture in a large bowl. Season with salt and pepper. Pour mixture into greased 8-inch square pan. Sprinkle top with jalapeno slices and remaining cheese. Set pan in water bath and bake for 1 hour or until firm.
