I accidently denied instead of approving a membership request. Is there a way to correct this?

just send them an e-mail asking them to join again with your groups link included. I've done this and said I was having an oops day :)

No problem.Just call them, accept your mistake and say you are interested.

Invite them again. You have an option to add a personal message, so apologize and explain that you did not mean to deny them.
