I am A Caterer /event planner Does anybody have a great brunch menu already tested?

Hi everyone. I know, what's a caterer doing asking for a brunch menu? well truth is your all real people and I goe on feed back. It's a corporate meeting and it must be spectacular!

  1. Me and my husband love Champagne Brunch. My husband instantly goes for the seafood while I like the omelet station.

    Breakfast

    Eggs Benedict, Hickory Smoked Bacon, Sausage, French Toast, Country Potatoes, Waffles and Blintzes with Sauces.

    Bagels, Rolls, Pastries, Breadsticks and Whipped Butter

    Seasonal Seafood or Fish, Carving Station with Slow Roasted Prime Rib served with Fresh Horseradish Sauce

    Chef’s Confections, and Selection of Seasonal Confection

    Beverages

    Champagne, Bloody Marys, Mimosas and All Non-alcoholic Beverages

  3. I am not sure if this is sit down or buffee so is hard but here are some food suggestions:

    bfast

    wonderful pastries on every table with sweet cream butter n jams, ck with french, german and polish bakeries

    assorted juices

    individual quiche assortment

    crepes

    eggs benedict

    crab benedict

    assorted fruit

    assorted meats

    french toast

    lunch ideas

    a few choices of salads; spin w/nuts and rasberries in hot bacon dressing, pasta salad, regular green salad

    prawns in garlic butter over rice or with noodles

    crab cakes

    without knowing the setting, # of people, what the event is for and time of yr is really hard to say but those would be my first suggestions.  I would also antisipate that there may be vegans/vegitarians there so no raw egg in the salad dressings.  good luck

  4. How many? If it is small do biscuits and sausage gravy, omelet bars and quiche are great for brunch. Strata holds really well in a chafing dish. Have a nice supply of breads and cheeses. Maybe fondue... It is good to have heart healthy foods too for obvious reasons. The most important thing, is to cook from the heart and everything will turn out perfectly. No person can dislike you if you feed them something delicious. :)

  5. I'd suggest two action stations - one for crepes, one for omelettes. Crepes always go over well, and make sure to have a couple fruit sauces (maybe an orange and a strawberry) and whipped cream on the side. If you have enough space, i'd also have a waffle station, with maple syrup, butter, and a couple fruit sauces to go with those as well.  Have a nice fruit display, and I would serve a yogurt sauce and/cottage cheese with it.  Have some bacon, sausage, quiche lorraine, scrambled eggs, and maybe some eggs benedict (hollandaise on the side) assembled in chafing dishes. A juice bar with 3 or 4 kinds of juices (along with coffee) is always impressive. The more options you have, the more attentive you'll seem to your guests.

I've had, and made, this casserole many times.  It's very unusual, and you can use whichever fillings you like best.  It calls for 2 packages of frozen blintzes for each batch, and they come in cheese, apple, cherry & blueberry.  I like to alternate the cheese & cherry, but whatever YOU like! ..... Good with a crisp green salad and a vignarette type dressing......

    BLINTZ SOUFFLE

    2 pkgs (6 in each) frozen blintzes

    1/2 c. butter

    4 eggs

    1/4 c. sugar

    1/2 tsp. cinnamon

    1-1/2 c. sour cream

    1-1/2 tsp. vanilla

    Melt butter in 9x13" pan.  Place frozen blintzes in single layer in pan;  roll and coat with melted butter.  Combine remaining ingredients.  Beat until smooth.  Pour over top of blintzes.  (May be prepared the night before and refrigerated to this point).  To serve:  bake uncovered for 45 min to 1 hour, in 350 oven.  Can serve with side dishes of sour cream and fruit preserves or sliced strawberries, other fresh fruit.....
