I am a first time canner wanting to make salsa Help!~?

After I skin the tomatoes I want to cut them up very small, will they end up as much after I pressure can them. Also, can I use a food processor to do this. If so which is a good one.

  1. I am always pleased to see new canners. Iy;a almost a folk art now. My victory garden is one of the ways I reduce my food miles and go green. I search the neighborhood for yards where people have loads of fruit and trade jams for the raw fruit. Sometimes I teach them how to put by jam.

    You don't *generally can tomato salsa becuase it's an acid food, tou adjust the ph with lemon or vinegar.  You DO pressure can all vegetables EXCEPT tomatoes.

    Generally you hot pack and water bath.

    Food doesn't reduce in the jar, so the amount you put in is the amount that you get.

    Of course you can use a food processor.   I would bring the salsa to a boil, pack it , wipe the rim and hot water bath process it.
