I don't know what age of children you teach, but one project my kids did in 2nd Grade was a "Time Capsule." They brought in a paper towel tube, and painted and decorated the tube. Then they wrote letters and drew pictures and rolled it up inside. Then they put a lid on them. (They did this the first week of school.) The teacher put them away until the end of the school year. At the end of the year they opened up their time capsules to see how their penmanship and drawing ability improved over the year.

One idea for months/year.
