I am a vegetarian, what is the best subsitute of egg to make dessert?

I am Lacto vegetarian, that means i can consume dairy products. I also do not eat products which are made of... e.g egg, animal fats (emulsifier 471, gelatine), etc.....

I think i need advice of people who have lot of knowledge of making veg cuisine. your expert advice will be a big help, cause it is very hard to find dessert, cakes and other sweet dish without eggs and animal fats.

There are several things that can sub for egg, depending on the nature of the recipe.  Ground flax seeds mixed with water form a gelatinous goop that works really well as an egg replacer, but contributes a flavor that can overpower more delicate baked goods (don't use them in sugar cookies, for example.)  Silken tofu whizzed in the blender can work, as can mashed banana, applesauce and Ener-G egg replacer (a powdered starchy product that you mix with water.)

Since most vegetarian cookbooks will go ahead and include eggs, it sounds like you could use a good vegan cookbook with lots of desserts.  Isa Chandra Moskowitz's books "Vegan with a Vengeance" and "Veganomicon" have cookies, cakes, pies, bars, muffins, etc... with no egg substituting required since they're built eggless from the ground up.  She also has an all cupcake book - "Vegan Cupcakes Take Over the World."  And I've heard really good things about "My Sweet Vegan" (but I don't know who the author is.)

I'm an Ener-G Egg Replacer girl.  Make sure you mix the replacer with the water before you add it to the recipe.  The instructions will be on the box.

As for flax seeds, it's 1 tbsp flax seeds and 3 tbsp water per egg.
