  2. Most lactose-intolerant people can eat things with small amounts of milk, like butter or cheese.  I suggest you cut out milk from your diet and then  remove cheese, yogurt, etc., one by one as far as you want to go.

  3. Try Silk Soymilk. You can drink it (it tastes great), and you can cook with it. So far the only thing it doesn't work too well in is cheesecake, came out soggy and runny. As far as eggs, try egg beaters. I'm not sure if they are completely egg free or not, you just have to read the box.

  4. You could gradually replace the non-vegan foods in your diet with vegan versions, like soymilk and soy yogurt... there are tons of non-dairy products available these days, everything from vegan cream cheese to vegan whipped cream!

Egg beaters are not vegan. Instead of eggs, scramble some tofu in a frying pan with your favorite spices and veggies. EnerG Egg Replacer is a good substitute for eggs in terms of baking.

Just check the label, usually it will say "contains milk and eggs" somewhere on the product... or read the ingredients. And don't worry if you make some mistakes; think of it as a learning experience. For a long time I ate naan Indian bread without knowing that it contains eggs. Now that I know, I don't eat it anymore.

    Good luck!

  6. Milk doesn't have anything really exceptional except the added Vitamin D that is in it. So I take a Vitamin D supplement, or go for the Vitamin fortified soy milk and enriched rice milk. You know that your body can only make Vitamin D from sunshine on your skin, which I do not get too much of during 2/3 of the year up here in the Midwest.

Vegans do have to watch out for Vitamin B12 depletion after the stored up B12 in the liver has been used (many people can have up to 5 years of stored up Vitamin B12 in their livers!). Vitamin B12 can usually only be found in animal products (along with cholesterol too), though some vegan scientists are now looking at bacterial sources. After being vegan for 3 years, I now take a supplement, although the cereals and milks are fortified with enough Vitamin B12 in each single serving of these foods.

I like to just suggest a varied diet. I try to keep my protein source choices to seeds/nuts, wheatmeat/seiten, and legumes. My main carb choices are pasta, rice, bread/whole grains, and potatoes. Vegetables are always the rainbow in most meals (red, yellow, orange, and of course always green!). Fruits are added also with color in mind.

  7. Your mean lactose intolerant? If you were lactose you would be a blob of milk fat. You need to talk to your doctor, but you should still be able to drink skim milk. If you want to cut out milk just become an ovo-vegetarian, and use soy, or rice milk. There is no lactose in eggs unless you order a cheese omelet.
