  1. You don't need it.  It adds zing so if you want zing try horseradish.


  2. If you are looking to add sweet, complex flavors use a combination of cinammon, allspice, mace,  nutmeg...if you are looking for hot add pepper extracts or cayenne. I think in Chinese you would want to use a combination of the sweet and add a bit of hot...there really is nothing that tastes like ginger so you are going to have to experiment. Remember that the sweet spices are used often in middle eastern cooking, they pack alot of flavor, so start sparingly. You could just add them bit by bit to some water so that you can tweak the result before adding it to the recipe.  Good luck!
