Question:

I am baking a meringue for Pavlova, but dont have parchment paper. Is there anything else I can use instead?

The meringue is baked in a 275 degree oven.

I have heard mixed reviews about using wax paper in the oven, re: smoking, etc.

You place the meringue in a circle in the center of a sheet lined with parchment, so alot of the paper is exposed directly to the heat.

I dont have to time to go to the store and purchase a silicone tray or parchment, so I need a safe replacement!

  1. Love Pavlova.  Been years since I had one.  My mother used to make a killer - crisp on the outside and and smooth as silk inside, with tons of strawberrys and cream on top.  YUM.

    Back to the issue, a brown paper bag will do but grease it.

    I don't remember ever having anything other than greaseproof paper in the kitchen growing up, so that's what mum put hers on.  In fact, all the baking went on greaseproof.

    h**l use it and dont worry.  It doesn't affect the flavour at all.

    And you usually put a Pavlova in to a hot oven and turn it way down for an hour or more don't you?  In which case you won't have a problem.

    Don't forget to grease it first, whatever you use.


  2. Hi I have used waxed paper when making cheese cake.   It is baked at 350 degrees.  At the initial there is a little smoking for about 2-3 minutes but the vent fan takes care of it.  I have never had a problem and the cakes turn out great.  Good luck
