  1. Hola, I'm from Spain:

Food besides tapas?? the Paella!!! it is worldwide famous!! it's a kind of rice with saffron. Also the cured ham!!, cheeses, salads, iberian sausages, fruits (especially the banana from the Canary islands, and the melon & watermelon), the potato or spanish omelette, the french omelette (I think it has spanish origin despite its name), gazpacho (fresh soup made with vegetables), different fishes, national wines and beers, the sangria (typical spanish fresh and alcoholic drink made with fruit, sugar, wine, rum)...

Costumes? we wear following the European style, If you mean the typical folkloric costumes... the most famous are the sevillanas dresses, altough they're only from Andalusia and specific from the Seville province, obviously.

Places you should include: all!!! Especially Madrid and Barcelona, two biggest cities, Andalusia and its moorish-style cities and towns, the way of St. James, the Mediterranean coasts, the archipielagoes (Canary and Balearic Islands), the lands of Castile (Salamanca, the oldest university in Spain), the Green Spain (North), the 13 world heritage cities and towns by the UNESCO, The Pyrenees...

    Many interesting places.

    Hope it helps!

  2. Places to include, in order of importance, imho,:

Madrid, Barcelona, Sevilla, Granada, Valencia, Toledo, Segovia, Avila, Santiago de Compustela, Burgos, León, A Coruña, Bilbao.  How's that for a start?

    Start at this site:

and then go to http://madridman.com  and link up from either of those to anything you need.

As for food:  Tapas is not so much a type of food as it is a plate size.  You can generally get anything a restaurant offers (sometimes that is restricted) in one of three sizes:  Full meal, Ración (sort of snack size - often the same size as a meal, but the meal includs two other plates) and tapa (appetizer size).  Most restaurants serve all sizes, many bars only serve tapas.  For some recipes and ideas, check these out.  Some have recipes, the last is an actual cookbook, rather interesting as the recipes date back so far.

Currently, people in Spain dress much like people all over the world, a little bit of an Italian designer look to their style, but if you are referring to their traditional dress, there are some 17 autonomous regions, each with their own traditional dress, so, there are 34 (male and female) traditional costumes.  The most recognizeable would probably be the Flamenco style of Andalucía.  Examples:
