  2. K, I'm a viet so this is easy, Pho Thai. Its a rice noodle soup with beef (I think hehe..) It's not spicy but you can add some stuff to make is spicy.

Pho bo.  It's traditional beef noodle soup and it is not hot spicy.  If you are squeamish about eating different cuts of meat then make sure that you look for the option (there will be many!) that offers only rare flank or skirt steak.  Don't worry if when it arrives at the table the meat is still a little rare.  They are usually very thin slices of beef and actually continue to cook in the hot broth.

    Spring rolls are good too-and not spicy unless you dip them in the nuoc mam oc.
