  1. That's great you're going vegan!

    I would take it at your own pace. It doesn't have to be an overnight switch; you can make a gradual transition if that's easier. Also, I'd just focus on getting the meat, eggs, and dairy out of your diet. (Don't worry about hidden / unpronounceable animal ingredients).

    There are a lot of non-dairy products (like soy cheese) and vegan fake meats (like Gardenburger Meatless Riblets) available these days. They make it a lot easier to replace the animal products in your diet. Here's a list of some popular vegan products: http://www.vegcooking.com/guide-favs.asp

    One of my favorite recipes:

    Tofu Scramble

    1 box Mori-Nu silken firm tofu, patted dry and mashed

    1/8 tsp. turmeric

    1 tsp. onion powder

    1/2 tsp. salt

    1/2 cup of veggies (I use bell peppers. You can use your favorite veggies - tomatoes, broccoli, fresh mushrooms, onions, etc.)

    Place the tofu in a lightly oiled sauté pan and cook over medium heat for 3 minutes. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.

  2. Make sure you are getting all the nutrients you need. Iron, B12, and calcium are common concerns for vegans. Iron can be found in spinach as well as certain legumes (check the nutrition labels), some soymilk and most cereals are fortified with b12, calcium can also be found in soymilk. If you do not like soy milk, try rice milk instead. You can also take vitamin supplements if you choose, but make sure they do not contain gelatin! Trader Joe's sells vegan supplements (not all are vegan, make sure to check the labels) and so do most health food stores.

  3. I am in the process of going vegan as well, and it's actually not as hard as I thought it would be. If I could give you just one tip, I would advise that you do it at your own pace. Don't feel like your in a rush, take it slowly and you'll be able to do it more thoroughly.

    When going vegan, it's important to eat lots of fruits, vegetables and foods rich in protein. Here is a list of foods that contain protein:

  4. If you are going vegan, the first thing you do is want to make sure you are getting all the supplements you need. It is even harder to be vegan then to be vegetarian. When buying things, you should also make sure that you check the label of everything. You might be surprised what goes into things.

  6. Congrats on your decision and ignore the mean people on here.  Most of us are nice :)

    This is the recipe for my vegan chili.  It's tried and true and should be just the thing for you...

    The ingredients are 1 bag of Morningstar Farms ground, 1 large can of crushed tomatoes, 1 can of chili magic, a chichi's corn cake packet and a can of cream corn.

    In a large pot, combine all the ingredients except for the corn and the corn cake mix. Heat until boiling and let it boil for like 8 minutes and it's ready.

    Follow the directions on the corn cake mix and heat it in the oven. It's better to start the cake first because it takes a lot longer. You can time it out right after practicing though.

    When both items are done, fill a bowl with half corn cake and half chili. Take a little corn bread and a little chili with each bite. Trust me, you can't go wrong with this recipe.

    It's completely cruelty free, and it only costs about 11.50 to make it. It serves 4 people with too much and probably 6 if you eat normal portions.

  7. Read...read a lot! I don't mean just what ever  vegan says. Do your research. Read good medical journals on studies. Read about proper nutrition (vitamins, etc.)

    Consider consulting a dietician/nutritionist that specializes in a vegetarian/vegan diet.

    Take some cooking classes. These can be harder to find but some Whole Foods offer them.

    Get some recipes either online or buy a recipe book- each are easy to find for vegans.

    Try a free vegan kit online from http://www.chooseveg.com

    Join a group (there are a lot online- like meetup.com) to find local veggies with more helpful insight, recipe swaps, etc.

    Seek out local vegetarian/vegan-friendly restaruants (happycow.com is a good resource).

    Consider taking a multi-vitamin with B12. B12 is probably the hardest things for vegans to get in their diet.

    Also, try consuming things like vitamin C after meals (orange juice after a yummy, grain-filled breakfast for example).

  8. read ingredient labels!!! Vegetarians need to do that too but Vegans become more sensitive (stomach wise) because they cut out dairy and eggs.
