  1. Baked Chicken

    very easy

    put chicken b*****s in your baking dish, pour a can of cream of chicken or cream of mushroom soup over it. (don't dilute it, straight from the can) then sprinkle parmesan cheese over it. bake at 350 for an hr to an hr and a half.

    baked potatoes, except cut them in half and put on cookie sheet. they can go in at the same time as chicken

    serve peas and mushrooms. (get one of those small cans of mushrooms)

    pineapple/cottage cheese salad

    buy a ready made pie and serve with ice cream.


  2. My favorite meal, I stumbled onto it by accident.  You can use any kind of meat you want.  Boneless chicken or turkey breast, Pork Chops, etc.

    Ingredients:

    Desired Meat amount equivalent for number of servings.

    Leaf Spinach

    Mixed Vegetables; Bag or individual cans mixed: approx 2oz/serving.

    2 small potatoes, peeled and cubed.

    1 cup Flour or Corn Meal or

    2 eggs beaten with 1 cup milk to coat meat.

    1 small onion or garlic: chopped.

    * Potato Cubes should be boiled for 5-10 minutes in pan of lightly salted water prior to adding to baking pan.  This assures that potatoes will be fully cooked.

    In a small square pan, 6" x 9" x 2",

    coat pan w/ cooking oil or Pam.

    cover bottom of pan with Leaf Spinach.

    Pour mixed vegetables over spinach

    (I prefer to use 1 small can of corn and 1 small can of peas, first layer uses half of each can).

    Place meat on top of vegetables (meat can be coated with flour, corn meal or dipped in egg batter or left bare to your desire).

    Drain water from boiled potatoes and surround Meat with cubes* and cover with chopped onion/garlic.

    Then cover with remaining mixed vegetables.

    You may choose to add your favorite seasoning at each step of the process as you prefer.  I like to use Italian seasoning and Mesquite Seasoning at the final stage.

    Cover pan with aluminum foil and place on center tray of oven, preheated to 400-450 degrees.

    Bake for 45 min (450 deg) to 60 min (400 deg).

    Check 10 minutes before time limit, to determine if meat is thoroughly

    cooked.  When finished, pull foil away from 2 opposing corners and allow to cool in oven 15 minutes.




  3. Try some pecan chicken:

    Ingredients:

    1 package chicken breats (skinless, boneless)

    salt & pepper

    6 Tbsp. butter

    Oil (preferrably olive oil)

    2 Tbsp. Dijon Mustard

    3 small packages pecan pieces

    Preheat oven to 350 degrees

    Melt 2 Tbsp butter and remove from stove

    Mix Dijon mustard into melted butter ~ you will dip chicken breats into this mixure

    Melt 4 Tbsp. butter and 2 Tbsp. oil in skillet

    Dip chicken b*****s in butter/mustard mixture, then coat with pecan pieces

    Saute chicken in butter/oil mixture in skillet for 3 minutes on each side ~ this sears the pecans onto the surface of the chicken.

    Place in glass baking dish and bake for 20 minutes at 350 degrees

  4. Pot roast with potatoes and carrots. You could also have coleslaw and roles. Don't forget the Sweet tea.

If it's currently warm where you live, a lovely chicken Caesar salad would probably go over well.  Boil the chicken in highly seasoned water (extra pepper and plenty of onion and garlic -- if it's got good flavor it doesn't need a lot of salt, so just use a little of that) and dice it.  Then, just before your friend arrives, make a nice Caesar salad and add the chicken to it.  Traditionally, there are no tomatoes in that kind of salad so it won't seem like something's missing.  Caesar salad is also a bit fancier than ordinary green salad, so it'll look like you made something special for her.  You can even get a Caesar salad kit at the grocery, if that'll help.

  6. German Lasagna

    ¾ cup butter

    ¾ cup all purpose flour

    1 Tbls beef bouillon granules

    2 tsp onion salt (or onion powder)

    2 tsp pepper – divided

    2 ¼ cups milk

    1 can (14 ½ ounces) chicken broth

    1 pound smoked kielbasa or Polish sausage – chopped

    2 eggs

    1 ½ cups (12 ounces) small curd cottage cheese)

    9 lasagna noodles, cooked and drained

    16 ounces can/jar sauerkraut, rinsed and squeezed dry

    2 cups (8 ounces) shredded Monterey Jack cheese, divided

    Preheat oven to 375

    For the sausage mixture: In a large saucepan, melt the butter. Stir in flour, bouillon, onion salt/powder, 1 tsp pepper. Stir/whisk until smooth. Gradually stir in milk and broth. Bring to a boil, cook and stir for 2 minutes or until thickened. Add the sausage and heat through. Remove from heat.

    For the cheese: Combine eggs, cottage cheese and remaining pepper.

    Sauerkraut: After squeezing dry the sauerkraut will need to be separated into a bowl.

    Making the dish: Spread 1 cup sausage mixture into the bottom of a 9 x 13 x 2 inch casserole dish. Build the lasagna as follows:

    • 3 noodles

    • 1/3 the remaining sausage mixture

    • ½ the cottage cheese mixture

    • ½ the sauerkraut and ½  cup Monterrey Jack cheese

    • 3 noodles

    • ½ the remaining sausage mixture

    • rest of the cottage cheese mixture

    • rest of the sauerkraut and ½  cup Monterrey Jack cheese

    • 3 noodles

    • rest of sausage mixture

    Cover and bake 60-70 minutes until bubbly. Spread remaining cup of MJ cheese, bake 5 min. longer until cheese is melted. Let stand 15 minutes before cutting.

    APPETIZER RECIPES:

    Asparagus Rolls

    Makes 20 appetizers.

    20 slices bread

    1 package frozen asparagus

    1 (5 ounce) jar processed pimiento cheese spread

    Trim crusts from bread slices; spread each with cheese. Cook asparagus until just tender. Chill.

    Lay one piece asparagus digonally across slice of bread. Turn opposite corners over asparagus, overlapping. Press firmly to seal. Wrap several sandwiches toether in wax paper. Place in covered container and chill for several hours.

    Shrimp Dip

    8 ounce cream cheese

    1 capful dried onion

    1 can tiny broken shrimp, drained (don't rinse)

    1 heaping tablespoon mayonnaise

    Mix all ingredients in mixer.

    Serve with firm potato chips. (Better make a double batch.) It's just as good with lite cream cheese and mayonnaise.

    the meal will be a combination of

    all seasons grilled chicken, curried rice, & blue cheese

    salad.

    ENTREE RECIPES:

    All Seasons Grilled Chicken

    1 1/2 cups chili sauce

    3/4 cup red wine vinegar

    1 1/2 tablespoons prepared horseradish

    2 small cloves garlic, halved

    1 teaspoon salt

    4 (6 ounce) bone-in chicken b*****s

    Mix chili sauce, vinegar, horseradish, garlic and salt in a bowl. Reserve 1/2 of the marinade. Add chicken to bowl; turn to coat. Cover; marinate in refrigerator for about 5 minutes.

    Preheat grill or broiler. Remove chicken from marinade; discard marinade in bowl. Place chicken on grill or on broiler pan.

    Grill or broil chicken, turning and basting frequently with half the reserved marinade, until juices run clear when meat is pierced with a knife, about 30 minutes.

    Heat remaining reserved marinade in a small saucepan, stirring occasionally. Serve hot alongside chicken.

    Curried Rice

    2 cups long grain white rice

    3 teaspoons curry powder

    1/4 cup (1/2 cube) butter or margarine

    1 teaspoon dry minced onion or a little minced fresh onion

    1/2 cup golden raisins, optional

    2 teaspoons salt

    4 cups water

    Top of stove method: Bring 4 cups water to a boil. Add all ingredients and cover tightly. Cook over low heat 20 minutes or until rice is done.

    Oven method: Mix all ingredients except water in 3-quart casserole. Stir in 4 cups boiling water. Cover tightly. Bake in a 400 degree F oven for 45 minutes.

    Bleu Cheese Dressing

    3 ounces cream cheese

    1/2 cup crumbled bleu cheese

    1/2 cup salad dressing or mayonnaise

    1/2 cup half-and-half

    1 tablespoon lemon juice

    Mix together and beat until smooth. Chill.

    Makes about 1 1/2 cups.

    the dessert will be a slice of fudge ice cream cake.

    DESSERT RECIPES:

    Fudge Ice Cream Cake

    1 (18.25 ounce) box chocolate cake mix

    1 pint chocolate ice cream, softened

    3 eggs

    1 cup water

    Mix well. Put in a greased and floured tube pan. Bake at 350 degrees F for 50 to 60 minutes. Dust with confectioners' sugar.
