It is at the grocery store with the canning stuff.  Not sure about the sorbets, if you are trying to replace gelatin you would need to change the recipe a lot.  I believe it requires cooking to work.

This is the best time to find it. It will be with "Canning/Freezing" supplies. You should be able to get it at your local grocery store, Walmart etc.
