  1. PINEAPPLE SAUCE:

    1 c. pineapple juice

    8 tbsp. cornstarch

    1 c. vinegar

    1 c. sugar

    Combine ingredients in saucepan. Stir constantly over medium heat bringing to boil. Boil until thickened.

    Makes 2 1/2 cups.



    SWEET AND SOUR PINEAPPLE

    SAUCE

    Serves 4.

    Sauce:

    3 tbsp. brown sugar

    1/2 c. pineapple juice

    1 tbsp. cornstarch

    2 1/2 tbsp. vinegar

    2 eggs beaten

    16 oz. pineapple chunks

    oil for frying

    1/2 c. water

    1/4 tsp. salt

    2 tbsp. ketchup

    2 drops Tabasco

    Heat all sauce ingredients and pour over shrimp and pineapple. Serve with fried rice.

    SWEET AND SOUR SAUCE

    SAUCE:

    1/2 green pepper, cut in 1-inch pieces

    1 med. onion, cut in 1-inch pieces

    1/4 c. vinegar

    1/2 c. pineapple juice

    4 slices pineapple, cut into chunks

    1 tbsp. vegetable oil

    1/4 c. catsup

    1/2 c. sugar

    1 tbsp. cornstarch

    1 tbsp. water

    To make sauce, saute green pepper and onion in vegetable oil. Add catsup, vinegar, sugar, pineapple juice and chunks. Heat together for a minute. Make a paste from the cornstarch and water; add to mixture. Bring to a boil. Serve sauce separately. Keep warm on an electric platter.

  2. For the pineapple salsa:

    1 1/2 cup canned or fresh crushed pineapple, drained

    1 jalapeño chili pepper, seeded and finely chopped

    1 red bell pepper, seeded and diced

    2 tablespoons fresh lime juice

    salt to taste

  3. 1pineapple fresh grill it not to over grill cut in to very small pieces,put half in one bowl and puree the other half add to the small cut pieces.

    Take 5 or more sprigs of cilantro depending on size chop fine add to bowl.

    Grill one jalapeno take seeds out or leave in depending if you like hot or not dice fine add to bowl.

    Add 2tea spoons of fine chop red bell peppers for color.

    Add sugar to taste I would use brown.

    Add 1 or 2 pinches of nutmeg

    Add Captain Morgans rum to you're liking.

    Mix well let sit for a while to  draw flavors out.

    with Piña Colada Sauce

    1 1/2 cup corn starch - divided

    2 cups plain bread crumbs

    2 cups sweetened coconut flakes

    1 1/2 cup liquid piña colada drink mix - divided

    2 Tbls. powdered sugar

    1/3 cup spiced rum

    1 lb. raw jumbo shrimp - peeled, deveined, butterflied

    1/3 cup sour cream

    1/3 cup canned crushed pineapple - drained

    -Place 1 cup corn starch in a bowl; set aside.

    -Combine bread crumbs, 1/2 cup corn starch, and coconut flakes in a separate bowl; set aside.

    -Combine 1 cup pina colada drink mix, powdered sugar, and rum in a separate bowl; set aside.

    -Coat shrimp in corn starch, then dip in pina colada mixture, then in coconut mixture, back into pina colada mixture, and back into coconut mixture.

    -Carefully drop each coated shrimp into 375 degree oil, fry until golden brown; drain on brown paper bags.

    -To make sauce, combine 1/2 cup piña colada drink mix, sour cream, and pineapple.

    -Dip fried shrimp in sauce.
