Question:

I am looking for a recipe where you grate potatoes and onions and fry?

i know you need potatoes, onions and cheese, breed crumbs and an egg but can't remember what it is called and if anything else is needed. i am fed up of chips and it is to go with fried egg and gammon steak, mushrooms and tomatoes

  1. That is an Austrian dish,its called Tiroler Grostle. Millions of recipes for it on the net, just google a recipe,then send me some! My fave.

  3. Dear Kath. Don,t make life hard for yourself. M ake Rosti. It,s supposed to have to wee dots over the o. tellyour guests that you learned that from a swiss expert! Any good potatoes; maris piper, kerrs pinks, or those excellent rooster spuds. Grate the potato or two( you get an awful lot from each spud}. Do something similar with onoin and keep the pulses on your wrists cold and wet with frequent applications of the cold tap. NOW, the important bit. Put the shredded potato in atea towel sock or whatever is to hand, or foot. Squeeze and twist until you have as much water out as possible. Without water, it fries beautifully. That,s it. Well seasoned or s steel frying pan, with a flat base for preference, rapeseed, corn, or any cheap cooking oil,about three tblspoons in an11or 12inc diameter pan, moderate heat: youve got to give it time. Place a thin 1/4in thick layer of potato and onion in the pan spreading it evenly overthe base. NOW LEAVE IT.  No poking or prodding until you see the base brown nicely, adjust the heat so it browns and doesnt burn. No rush. When that,s done, fish slice palette knife, wallpaper scraper, anlift gentlt in one piece and turn over. Repeat browning, then pop onto your plate ,salt pepper, and enjoy. Good luck and happy eating

  5. Rosti -

    Ingredients

    1 kg starchy potatoes (baking, russets or all purpose)

    100 g butter

    Salt and black pepper

    2 clean tea towels

    Method

    Peel and coarsely grate the potatoes

    Dry the grated potatoes by heaping them on a clean tea towel, gathering the corners together, wrapping them up and squeezing to press out as much water as possible. Repeat this with a second clean tea towel

    Lightly season the potatoes with salt and black pepper

    Add any extras - fresh herbs, grated onions or finely chopped bacon

    Melt half of the butter in a non stick frying pan (approx 9 inch diameter)

    Wait for the foam to subside and spread the potato mixture over the hot pan to make a cake, tuck more butter around the sides of the pan, press the cake with a spoon or spatula

    Cook on a low heat for 15 - 20 minutes, pressing occasionally

    Once the rosti is brown and crispy on the underside, loosen, place a large plate on top and invert

    Add the remaining butter and then slide the uncooked side into the pan and cook for around 10 minutes until browned

    If using cheese add 5 minutes before you think the rosti will be done

    Rosti can be reheated or eaten cold but is best served immediately
