  1. There are many recipes for pozole in Mexico, it's made with clear, green or red broth, depending on the condiments used. Also, some people use only pork or only chicken, you can adjust that depending on what you prefer. I am from the state of Veracruz, and I myself prepare green pozole, here's my recipe:

    Ingredients:

    1 chicken breast

1/2 lb clean cubed pork meat (lomo)

1 bag or can of pozole corn (cacahuazintle), well rinsed

    1/2 onion

    A few parsley sprigs

    Green tomatoes (around 6 pieces)

    Cilantro (a bunch)

Garnishes: Diced onions, radishes, roman lettuce, dried oregano, dried ground red chile

    1. Boil the corn in enough water until well cooked. This may take around 45 minutes to 1 hour. Discard all the liquid.

    2. Cook the meats in a large pot with enough liquid, the onion and parsley, to make the broth. Shred the chicken and return to pot. Discard the onion and parsley. Add the cooked corn.

    3. Puree the green tomatoes and cilantro in a blender with a little bit of broth. Strain and add to pot. Omit this step if you want clear broth pozole.

    4. Add salt and pepper to taste and let everything cook together on low heat for about 25-30 mins more.

    5. Serve hot and put garnishes on the table.

  2. I learned to make pozole from a New Mexican. I think they have been making it there since it was part of Mexico. It's real simple, just put some hominy in a pan, add diced onions and diced green chili peppers. You can also add some cooked pork but I don't since i'm  a vegetarian. Heat the pozole till the onions are clear. Make some homemade tortillas and serve the pozole in a bowl with a tortilla laid across it like a lid. Also you can buy special canned pozole hominy, but I can't tell much difference between it and regular hominy.

  3. Don`t forget the lime and tostadas.
