go to cruisecritic.com and go to the message boards.  There is alot of info about each port and 1st hand reviews / experiences on the tours.  You can book private tours directly with the tour operators and usually have a better experience for a better price than booking with the cruise line.  There are sites like shoretrips.com and porttrips.com but you can get better prices booking the same stuff on your own.

I would recommend cruiselinefans over cruisecritic.  Unfortunately, the CC moderators tend to censor mentions of excursion companies that do not advertise with them.  You can mention opinions (and ask about) of excursion companies and read up on different ports on CLF.
