Question:

I am looking ideas for items to serve for a light brunch/lunch wedding reception..we are making it ourselves..

We will need lots of vegetarian selections..no pork or shell fish. Chicken, turkey and beef are ok:) We are having about 100 people..and the wedding is at 10am. Thanks!

  1. Spinach Quiche

    INGREDIENTS

    1/2 cup butter

    3 cloves garlic, chopped

    1 small onion, chopped

    1 (10 ounce) package frozen chopped spinach, thawed and drained

    1 (4.5 ounce) can mushrooms, drained

    1 (6 ounce) package herb and garlic feta, crumbled

    1 (8 ounce) package shredded Cheddar cheese

    salt and pepper to taste

    1 (9 inch) unbaked deep dish pie crust

    4 eggs, beaten

    1 cup milk

    salt and pepper to taste

    DIRECTIONS

    Preheat oven to 375 degrees F (190 degrees C).

    In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.

    In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.

    Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.


  2. Vegetarian selections don't have any animal flesh in them just so you know.  We don;t eat fish, chicken or anything else that was alive once. Maybe I read that wrong though?

    Here is a recipe I make and it's a really good cold dish.  I adjusted the quantity at the website for 75 people

        *   12 1/2 lbs green beans

        * 25 tablespoons peanut oil

        * 25 tablespoons soy sauce

        * 25 teaspoons sesame oil

        * 25 teaspoons rice vinegar

        * 25 garlic cloves, crushed

        * 50 tablespoons toasted sesame seeds

    Directions

       1.   Clean and break green beans, then steam for 3-5 minutes, or until just cooked. Plunge into cold water bath to stop cooking, and drain.

       2.  Grind 1 tablespoon Sesame Seeds. Mix in salad bowl with oils, vinegar, and soy sauce.

       3. Toss with green beans and let marinate for at least one hour.

       4.  Garnish salad with reserved sesame seeds, and serve.

    You can pre-cook the green beans and put them in the fridge the night before and then in the morning..mix everything together.  Sorry it's all in tablespoons..the website doesnt do "cups"

    Use minced garlic from a jar..much easier.

  3. What about boxed lunches? make wrap sandwiches and cut in half, serve in a styrofoam container and put fresh fruit, a bag of chips, a bit of pasta salad, and the sandwich inside. Decorate outside with different colored ribbons to distinguish beef/chicken/veggie

    Then on each table have salsas, veggies and cut veggie dip, and serve 2 different soups: like a cold cucumber soup and an italian wedding soup so you can have hot or cold soups
