what else can I use instead of skirt steak for the meat ( not chicken that is in the enchilladas)

your definately going to wantto get some really rare meat.  like some decent porter house marinated or a good strip steak.  have the butcher cut it up real thin, and just cook it like normal.

there are burrito, taco, fajita, etc. making kits at your supermarket and they have inside them, the actual wrap bread thing, the sauce for cooking the meat in, the sauce to put in your wrap, and all you have to add is the meat and salad.

For the meat, you can have pretty much whatever you like. On the kits they have things apart from chicken, although it's the most common.

You can use any kind of meat except ground meat. I used pork shoulder one time and sprinkled it with lime juice and salsa and I had a winner!

Just slice the meat you use thin like that of the skirt steak and you will be alright.

You can use round steak, just pound it before grilling or marinating it.  You can use ground beef for tacos....Are you making them from scratch?  You just add onion, jalapeno, chili powder, salt, a little water, cumin, it is super easy to make the taco mix without a envelope of powder....Have a fun time.
