Question:

I am not an indian but I love their food.?

Of late I am hooked on to the indian cuisine. There is something about those dishes that drives me nuts. I have also wondered how they get the gravy of the dishes like tandoori chicken or paneer (cottage cheese) tikka or butter masala or something like that. A couple of days back I had this dish called 'saag paneer' and man was it awesome!!!!! I love spicy foods a lot so when I was invited to an indian house I loved the food and the spicyness of it. I wanted to ask the host how do they prepare such tasty dishes but I thought it might be rude of me.

So anyone out there, pl. help as I have been inspired to do some cooking of my own after having tasted indian cuisine.I wish to surprise my GF.

Why on earth would anyone find it rude to ask how things were made?  I would think most people would be very flattered by that.  Some people have their secret family recipes of course but most are willing to share recipes.  I love foods from all over the world.  I would say the best thing would be to ask your Indian friends, they'd probably love to help you out.

  6. I , too, love that Indian food. Palak Paneer is my favorite (spiced spinach with cheese cubes)!!  In my larger local supermarkets, there is a great selection of jarred sauces and "cooking bases" for indian food. I believe the brand is called Taste of India or Bombay something... Anyway, good luck and happy eating!!

  8. In India there are four basic gravies:

    *Red Gravy:- in it OGG paste is golden browned and then spices like tummeric(haldi) powder, kashmiri red chilli powder, corriander powder, cumin(jeera) powder are added and nicely roasted.

    *White Gravy:- OGG is added and then without frying it paste of almond, cashew paste are added and then hung curd is added to make rich white gravy. (all makhni dishes contain white gravy)

    *Brown Gravy:- It is similar to red grvy but in place of kashmiri red chilli powder, common red chilli powder isadded as kashmiri red chilli powder contains natural coloing agents.

    *Green Gravy;- It is similar to brown gravy, but green palak saag(spinach) is added to make it green.

    Here OGG means - Ogion+ginger+garlic paste

    and cashews, almonds and raisins can be added in almost every type of gravys to make it rich and tasty.

  13. Many of these dishes can be replicated easily using sauces found in the Ethnic section of your market also recipes can be found on line. All cooking is like chemistry just follow the directions use the right ingredients and add a little love.

Almost  all graveis are made by natural indian spices in traditional ways weather it is factory or home made according to the regional taste with a cntinental view. for example a dal/fish curry 's  masala mixture differs  regionwise.After all I  think Indian is the only one country in the world with so many diversities in culture, lanuage, religieon, castes and sub-castes,weather conditions and yet maintaining as one. Just go through some   Mughali /Kashmiri    or south Indian cooking receipe.

  15. go to a bookstore like barnes and noble, borders, book a million, etc.  all have a great cooking section and you can find cooking books from basically every culture.

    I've recently acquired a taste my grandmother old hazara recipes and was able to find an Afghan cook book at borders so I'm sure you can find Indian.
