No.  Your job must be directly related to your educational degree and technical skills.  If you have an IT degree you must work in the IT field.

H1B visas are more for tech-oriented jobs. If the hotel industry has tech-related jobs (such as maintaining the hotel's website), then an H1B visa might be approved for that.

to work for another employer you must obtain another h1b. then you need to prove to INS that the hotel was not able to find any american citizen suitable for that job. they might question though how someone in IT be trying to get a job in a hotel. in that case, you'd probably get a denial.

On H1B, you can only work for the employer on the H1B visa who petitioned you. If you find another job, you need to get another H1B to work for that employer.
